Easy One-Pan Lemon Garlic Chicken and Rice

A simple, flavorful one-pan meal featuring crispy-skinned chicken thighs and lemony garlic rice, perfect for busy weeknights.

  • 4 to 6 bone-in, skin-on chicken thighs (about 1.5 pounds)
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 5 cloves garlic, minced
  • 1 cup long-grain white rice (basmati or jasmine)
  • 2 cups low-sodium chicken broth
  • 1 large lemon (zest and juice)
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika (smoked preferred)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 375Β°F (190Β°C). Pat chicken thighs dry with paper towels. Season generously on both sides with salt, pepper, and paprika.
  2. Heat olive oil in a large oven-safe skillet over medium-high heat. Place chicken skin-side down and cook undisturbed for 5-6 minutes until deep golden brown. Flip and cook for another 3 minutes. Transfer chicken to a plate.
  3. Reduce heat to medium. Add minced garlic and stir for 30 seconds until fragrant. Add rice and stir for 1 minute to toast slightly.
  4. Pour in chicken broth, scraping up browned bits from the bottom. Add lemon zest, lemon juice, and dried thyme. Stir to combine.
  5. Nestle chicken thighs back into the pan, skin-side up, on top of the rice. Bring liquid to a gentle simmer.
  6. Cover skillet with a tight-fitting lid or foil. Transfer to oven and bake for 25-30 minutes, until rice is tender and chicken reaches an internal temperature of 165Β°F (74Β°C).
  7. Remove from oven and let rest, covered, for 5 minutes. Uncover, sprinkle with fresh parsley, and fluff rice gently with a fork.

Notes

Pat chicken dry for crispy skin. Don’t lift the lid while baking to ensure fluffy rice. Let rest 5 minutes before serving. For leftovers, reheat in a skillet with a splash of broth.
