Instructions

  1. Prep your workstation. Lay out tortillas, shredded cheese, softened butter, and a small bowl of salsa.
  2. Butter one side of each tortilla using a pastry brush or butter knife. Place tortillas butter-side down on a plate.
  3. Sprinkle about 1/4 cup of shredded cheese evenly over half of each tortilla, leaving a small border around the edge.
  4. Fold the empty half of the tortilla over the cheese-filled half to create a half-moon shape. Gently press down.
  5. Heat a non-stick skillet over medium heat for about 30 seconds.
  6. Place the quesadilla in the skillet, butter-side down. Cook undisturbed for 2-3 minutes until the bottom is golden brown.
  7. After about 1 minute, gently press down on the quesadilla with a spatula to create a thin, crispy texture.
  8. Flip the quesadilla carefully and cook for another 2-3 minutes, pressing again after a minute, until both sides are golden and crispy.
  9. Transfer the cooked quesadilla to a cutting board and let it rest for 30-60 seconds.
  10. Using a pizza cutter or sharp knife, cut the quesadilla into strips (about 4-5 strips, each 1.5 inches wide). Let cool completely on a wire rack.
  11. Pack the cooled strips in a lunchbox container with a small cup of salsa, sour cream, or your favorite dip. Store dippers and sauce separately to keep strips crisp.
