A smooth, rich, and velvety turkey gravy made without pan drippings. This foolproof recipe uses a simple roux technique with butter, flour, broth, and milk to create a crowd-pleasing sauce in under 10 minutes.

Ingredients

Scale
  • 1/2 cup unsalted butter
  • 1/2 cup all-purpose flour
  • 2 cups chicken or turkey broth (low-sodium, warmed)
  • 1 cup whole milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)
  • 1 pinch nutmeg (optional)

Instructions

  1. Melt the butter in a medium saucepan over medium heat until foamy and liquid, about 2 minutes.
  2. Sprinkle the flour over the melted butter and whisk constantly to form a roux. Cook for 2-3 minutes until it smells nutty and resembles thick peanut butter.
  3. Slowly add the warm broth in small increments (about 1/2 cup at a time), whisking vigorously after each addition to prevent lumps.
  4. Once the broth is incorporated and the mixture is smooth, pour in the whole milk and whisk until combined.
  5. Bring the mixture to a gentle simmer. Stir in garlic powder, onion powder, thyme, nutmeg, salt, and pepper.
  6. Simmer for 1-2 minutes until the gravy coats the back of a spoon. Adjust seasoning and consistency as needed.
  7. Remove from heat and serve immediately. Strain through a fine-mesh sieve if a super-smooth texture is desired.

Notes

Warm the broth and milk before adding to the roux to prevent lumps. Use low-sodium broth to control salt levels. If the gravy is too thick, whisk in more warm broth or milk. If too thin, simmer longer. For a dairy-free version, substitute butter with olive oil and milk with unsweetened almond or oat milk.
