Ingredients

Scale
  • 2 cups All-Purpose Flour
  • 1 tablespoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 1/2 cup Unsalted Butter (very cold, cubed)
  • 1/2 cup Granulated Sugar
  • 1/2 cup Pumpkin Puree (100% pure)
  • 1 teaspoon Vanilla Extract
  • 1/4 cup Milk or Heavy Cream
  • 1 cup Powdered Sugar (for glaze)
  • 2–3 tablespoons Maple Syrup (for glaze)
  • 1–2 tablespoons Milk (for glaze consistency)

Instructions

  1. Preheat oven to 400Β°F (200Β°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  3. Add cold, cubed butter to the dry ingredients. Use a pastry cutter or fingers to work butter into flour until mixture resembles coarse crumbs with pea-sized butter bits.
  4. Make a well in the center and pour in pumpkin puree, sugar, vanilla, and milk. Gently stir with a spatula until dough just comes together; do not overmix.
  5. Turn dough onto a lightly floured surface and press into a 1-inch thick disk. Fold edges into center once or twice, then cut into 8 wedges.
  6. Place wedges on the prepared baking sheet, leaving space between them.
  7. Bake for 15-18 minutes until edges are golden brown and tops spring back when touched.
  8. Let scones cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.
  9. While scones cool, whisk powdered sugar, maple syrup, and milk together until a drizzling consistency is reached.
  10. Drizzle glaze over cooled scones and let set for 10 minutes before serving.

Notes

Ensure butter is very cold to create flaky layers. Do not overmix the dough to avoid tough scones. Cool scones completely before glazing to prevent sogginess. For gluten-free, use a 1:1 gluten-free flour blend. For dairy-free, use vegan butter and oat milk.
