30-Minute Crispy Baked Chicken Wings for Game Day

  • 2 pounds chicken wings, separated into drumettes and flats (about 1216 pieces total)
  • 1 tablespoon baking powder (NOT baking soda)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1 tablespoon cornstarch
  • 1/3 cup hot sauce (Frank’s RedHot recommended)
  • 3 tablespoons unsalted butter, melted
  • 1 tablespoon honey
  • 1 teaspoon Worcestershire sauce
  • Celery sticks for serving
  • Carrot sticks for serving
  • Blue cheese or ranch dressing for serving

Instructions

  1. Preheat your oven to 425°F (220°C). Place one rack in the upper third of the oven and another in the lower third.
  2. Dry the wings thoroughly with paper towels until no visible moisture remains.
  3. In a small bowl, combine the baking powder, salt, pepper, garlic powder, smoked paprika, and cornstarch. Whisk together.
  4. Place the dried wings in a large mixing bowl. Sprinkle the seasoning mixture over them and toss well with your hands until evenly coated.
  5. Place a wire rack inside a rimmed baking sheet. Arrange the wings in a single layer, skin-side up, with space between each piece.
  6. Bake for 15 minutes on the upper rack. Remove from oven, flip each wing, and return to the lower rack. Bake for another 10 minutes.
  7. Flip the wings once more so they are skin-side up. Move the pan back to the upper rack and bake for a final 5-8 minutes until golden brown and crispy (total time about 30-33 minutes).
  8. Check for doneness: internal temperature should read 165°F (74°C) at the thickest part of the drumette.
  9. While wings bake, combine hot sauce, melted butter, honey, and Worcestershire sauce in a small saucepan. Warm over low heat, stirring occasionally, until combined. Keep warm.
  10. Transfer hot wings to a large bowl. Pour sauce over them and toss gently until each wing is coated. Serve immediately with celery, carrots, and dipping sauce.

Notes

The baking powder is non-negotiable for crispiness. Do not substitute baking soda. Drying the wings thoroughly is the most important step. For extra crispiness, let seasoned wings rest at room temperature for 10 minutes before baking. Leftover wings can be stored in an airtight container in the refrigerator for up to 4 days. Reheat in a 400°F oven for 5-7 minutes.
