Halloween deviled eggs - featured image

A fun and spooky twist on classic deviled eggs, featuring creamy, tangy filling piped into hard-boiled eggs and decorated with black olive spider legs and peppercorn eyes. Perfect for Halloween parties and easy to make in under 30 minutes.

Ingredients

Scale
  • 6 large eggs, hard-boiled and peeled
  • 1/2 cup full-fat mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon garlic powder
  • 1 teaspoon smoked paprika (plus more for garnish)
  • 2 medium black olives per egg, sliced into thin strips
  • 2 small black peppercorns or fish roe per egg (for eyes)
  • Salt to taste

Instructions

  1. Place eggs in a single layer in a saucepan and cover with cold water by an inch. Bring to a rolling boil, then remove from heat, cover, and let sit for 12 minutes.
  2. Transfer eggs to an ice water bath and let cool completely for about 10 minutes to stop cooking and aid peeling.
  3. Peel the cooled eggs under running water, pat dry, and slice each egg in half lengthwise.
  4. Scoop out the yolks into a mixing bowl, keeping the egg white halves intact.
  5. Mash the yolks with mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, and smoked paprika until smooth and creamy.
  6. Taste the mixture and add salt and pepper if needed, keeping in mind the olives add sodium.
  7. Transfer the filling to a piping bag (or a zip-top bag with the corner cut off) and pipe into the egg white halves.
  8. Slice black olives into thin strips to create spider legs. Place two peppercorns or dots of caviar on the filling for eyes.
  9. Arrange the olive strips around the eyes to resemble spider legs.
  10. Lightly dust with extra smoked paprika for color and serve immediately.

Notes

[‘The ice bath is crucial for easy peeling.’, ‘Do not overmix the filling to avoid a gluey texture.’, ‘Assemble the spider decorations right before serving to prevent olives from oxidizing and turning brown.’, ‘Store leftovers in an airtight container in the refrigerator for up to two days. Do not freeze.’, ‘Ensure mayonnaise and mustard are certified gluten-free if necessary.’]
