Soft, chewy fall cookies made with reduced apple cider and topped with a warm cinnamon glaze. These cookies offer a tender texture and intense autumn flavor, perfect for holiday gatherings or cozy weeknights.

  • 2 ½ cups all-purpose flour
  • ½ cup unsalted butter, softened to room temperature
  • 1 cup granulated sugar
  • ½ cup packed brown sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ teaspoons ground cinnamon, divided
  • 1 ½ cups powdered sugar (for glaze)
  • 2–3 tablespoons apple cider or milk (for glaze)
  • ½ teaspoon cinnamon (for glaze)

Instructions

  1. Pour 2 cups of apple cider into a medium saucepan. Bring to a boil over medium-high heat, then reduce heat to medium-low. Simmer until reduced to about ¼ cup of thick, syrupy liquid (approx. 20-25 minutes). Let cool completely.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and 1 teaspoon of cinnamon. Set aside.
  3. In a large bowl, use an electric mixer to beat the softened butter, granulated sugar, and brown sugar until light and fluffy (2-3 minutes).
  4. Add the cooled reduced cider and the egg to the butter mixture. Beat on low speed until combined. Scrape down the sides of the bowl and add vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  6. Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes.
  7. Preheat oven to 350°F (175°C). Line two large baking sheets with parchment paper.
  8. Scoop tablespoon-sized portions of dough onto the prepared sheets, spacing them 2 inches apart.
  9. Bake for 10-12 minutes until edges are lightly golden but centers still look soft.
  10. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  11. While cookies cool, whisk powdered sugar, 2 tablespoons cider (or milk), and ½ teaspoon cinnamon. Add more liquid as needed to reach a drizzling consistency.
  12. Drizzle or dip the cooled cookies in the glaze. Let set for 10-15 minutes before serving.

Notes

Ensure the cider is reduced to a syrupy consistency for the best flavor. Do not skip the chilling step, as it prevents excessive spreading. Use parchment paper for even baking and easy cleanup. Let cookies cool completely before glazing to prevent the glaze from melting into the cookie.
