  • Kosher salt, coarse, for seasoning
  • Freshly cracked black pepper
  • 4 burger buns (brioche or potato rolls recommended)

Instructions

  1. Form the Patties (10 minutes): Gently break the ground beef into four equal portions, about 4 ounces (115 grams) each. Lightly shape them into round patties about ¾ inch (2 cm) thick. Make a slight indentation in the center of each patty with your thumb to prevent puffing up while grilling.
  2. Season Generously (5 minutes): Just before grilling, sprinkle kosher salt and freshly cracked black pepper on both sides of each patty. Be generous but not excessive.
  3. Preheat the Grill (5 minutes): Heat your grill to high (around 450°F / 230°C). If using charcoal, wait until the coals are glowing and covered with white ash. Clean and oil the grill grates to prevent sticking.
  4. Grill the Burgers (8-10 minutes): Place the patties on the grill indentation-side up. Cook for about 4-5 minutes per side for medium doneness. Flip only once or twice. If adding cheese, place a slice on the patties during the last minute and close the lid to melt.
  5. Rest and Assemble (5 minutes): Remove burgers from the grill and let them rest for a few minutes to redistribute juices. Toast the burger buns lightly on the grill until golden. Assemble with your favorite toppings or serve simply as is.

Do not overwork the meat when forming patties to avoid dense texture. Make a thumb indentation in the center of each patty to prevent puffing. Season just before grilling to create a flavorful crust. Avoid pressing down on patties while grilling to keep them juicy. Rest burgers after grilling to redistribute juices. Toast buns lightly on the grill for extra texture.
