  • 45 lbs pork shoulder (pork butt)
  • 1/2 cup brown sugar (100 g)
  • 1/3 cup bourbon (80 ml)
  • 1/4 cup apple cider vinegar (60 ml)
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp salt
  • 1 tsp black pepper
  • 2 tbsp yellow mustard
  • 1216 slider buns
  • Optional toppings: pickles, coleslaw, sliced jalapeΓ±os

Instructions

  1. Trim the pork shoulder by removing excess fat and silver skin. (10 minutes)
  2. Mix brown sugar, smoked paprika, garlic powder, onion powder, salt, and black pepper in a small bowl. Rub all over the pork shoulder. (5 minutes)
  3. Whisk together bourbon, apple cider vinegar, and yellow mustard in another bowl. Set aside. (5 minutes)
  4. Place the seasoned pork shoulder in a slow cooker. Pour bourbon sauce over the pork. Cover and cook on low for 6-7 hours or on high for 3-4 hours until tender.
  5. Shred the pork using two forks or tongs directly in the slow cooker, mixing with the sauce. Adjust seasoning if needed. (10 minutes)
  6. Warm slider buns in the oven at 350Β°F (175Β°C) for about 5 minutes until soft and slightly toasted. (5 minutes)
  7. Assemble sliders by piling shredded pork on buns and adding optional toppings. Serve immediately. (5 minutes)

Notes

If the sauce is too thin after shredding, remove the pork and simmer the sauce on the stove to thicken before mixing back in. Low and slow cooking yields the best tenderness. You can substitute bourbon with apple juice or chicken broth for a non-alcoholic version. For gluten-free, use gluten-free buns or lettuce wraps.
