  • Fresh corn on the cob (with husks on or husked)
  • 2 tablespoons water
  • Butter, softened (optional)
  • Salt to taste
  • Freshly cracked black pepper (optional)
  • Fresh herbs like parsley or cilantro (optional)
  • Lime juice or smoked paprika (optional for flavor twist)
  • Olive oil or dairy-free spread (optional, for dairy-free version)

Instructions

  1. Prepare the corn: If husked, rinse under cool water to remove silk and trim rough ends. If husks are on, peel back husks gently without removing entirely and remove silk strands. (3-5 minutes)
  2. Place the corn on a microwave-safe plate and sprinkle about 2 tablespoons (30 ml) of water over it.
  3. Cover tightly with plastic wrap or a microwave-safe lid to trap moisture.
  4. Microwave on high for 3-4 minutes for one ear of corn. For multiple ears, add about 2 minutes per additional ear. If not tender, microwave in 30-second bursts until desired texture is reached. (3-6 minutes)
  5. Carefully remove the cover using tongs or a kitchen towel to avoid steam burns.
  6. Spread softened butter over the hot corn, sprinkle salt and pepper, and garnish with fresh herbs if desired. Serve immediately.

Notes

Use enough water and cover tightly to keep corn juicy. Rotate plate halfway if microwave lacks a turntable. Adjust cooking time based on microwave wattage and number of ears. For dairy-free, substitute butter with olive oil or dairy-free spread. Leftovers keep well refrigerated for up to 2 days and reheat wrapped in a damp paper towel.
