These no-bake, make-ahead mini football-shaped cheese ball bites are creamy, savory, and perfect for game day. Made with simple ingredients and easily customizable, they’re a crowd-pleasing appetizer that disappears fast.

  • 16 ounces cream cheese, softened to room temperature
  • 2 cups sharp cheddar cheese, finely shredded
  • 1/4 cup unsalted butter, softened
  • 1 packet ranch seasoning mix (about 1 ounce)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Pinch of cayenne pepper (optional)
  • 1/2 cup finely crushed tortilla chips or panko breadcrumbs
  • Pretzel sticks, broken into small pieces (about 12 sticks)
  • 2 tablespoons finely chopped fresh chives (optional)

Instructions

  1. Take cream cheese and butter out of the fridge at least 30 minutes before starting to soften to room temperature.
  2. In a large mixing bowl, combine softened cream cheese, softened butter, and ranch seasoning packet. Beat with a hand mixer on medium speed until smooth and fluffy, about 2 minutes. Scrape down sides of bowl.
  3. Add finely shredded cheddar cheese, garlic powder, onion powder, and cayenne (if using). Mix on low speed just until combined. The mixture should be a thick, spreadable paste.
  4. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes (up to 1 hour).
  5. While mixture chills, crush tortilla chips into fine crumbs (like sand texture) and place in a shallow bowl. Break pretzel sticks into 1/4-inch pieces and set aside.
  6. Line a baking sheet with parchment paper. Using a cookie scoop or tablespoon, portion out the chilled cheese mixture. Roll each portion into a 1.5-inch ball between your palms.
  7. Shape each ball into an oval by gently squeezing between thumb and forefinger, then taper both ends to form a football shape.
  8. Roll each shaped football in crushed tortilla chips, pressing gently to adhere. Place on parchment-lined baking sheet.
  9. Using a toothpick or knife tip, make two small indentations on top of each football. Press two pretzel stick pieces into the indentations to form laces.
  10. Refrigerate shaped and decorated cheese balls for at least 1 hour before serving. Can be made up to 2 days ahead; cover tightly with plastic wrap.

Notes

Full-fat cream cheese is non-negotiable for best texture. Shred cheddar from a block for best results. Keep hands cold while shaping to prevent mixture from softening. Work in small batches, keeping remaining mixture chilled. For dairy-free, use Kite Hill cream cheese and vegan cheddar, but texture will be softer. Can freeze undecorated cheese balls for up to 3 months.
