  • ½ cup (113g) unsalted butter, softened
  • ¾ cup (150g) packed dark brown sugar
  • ½ cup (170g) unsulphured molasses
  • 1 large egg, room temperature
  • 1 teaspoon baking soda
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • ¼ teaspoon salt
  • ½ cup (120ml) hot water
  • 8 oz (226g) cream cheese, softened
  • ¼ cup (50g) granulated sugar
  • 1 large egg yolk, room temperature
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving a 2-inch overhang on two opposite sides. Lightly grease the parchment.
  2. In a medium bowl, beat softened cream cheese with an electric mixer until smooth, about 2 minutes. Add granulated sugar and beat until combined. Add egg yolk and vanilla extract; mix until silky and lump-free. Set aside at room temperature.
  3. In a large bowl, beat softened butter and brown sugar together until light and fluffy, about 3 minutes. Scrape down sides halfway through.
  4. Add molasses and whole egg to the butter mixture. Beat on medium speed until fully incorporated and smooth.
  5. In a small bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
  6. Gradually add dry ingredients to wet mixture, mixing on low speed until just combined. Do not overmix.
  7. With mixer on low, slowly pour in hot water. Mix until fully incorporated and batter is smooth (batter will be thin).
  8. Pour gingerbread batter into prepared pan and spread evenly. Drop spoonfuls of cream cheese mixture (8-10 dollops) over the batter. Gently swirl with a butter knife or offset spatula using a few figure-eight motions; do not over-swirl.
  9. Bake for 28-32 minutes, until edges are set and a toothpick inserted in center comes out with a few moist crumbs. Center may still look slightly jiggly.
  10. Cool bars in pan on a wire rack for at least 1 hour. Then refrigerate for at least 2 hours, preferably 4 hours, before slicing and serving.

Notes

Use unsulphured molasses, not blackstrap. Ensure cream cheese is fully softened to avoid lumps. Do not over-swirl the cream cheese. Chilling is essential for clean slices and proper texture. For gluten-free, use a 1:1 gluten-free baking flour blend. For dairy-free, use vegan butter and dairy-free cream cheese. Bars can be stored in the refrigerator for up to 5 days or frozen for up to 3 months.
