Instructions

  1. Brown the butter: Place unsalted butter in a medium saucepan over medium heat. Melt completely, swirling occasionally, until it foams, turns amber, and smells nutty (5-7 minutes). Remove from heat immediately and pour into a heatproof bowl. Let cool for 10-15 minutes.
  2. Mix wet ingredients: In a large bowl, whisk together cooled brown butter, granulated sugar, and brown sugar until smooth. Add room temperature egg, vanilla extract, and pumpkin purée. Whisk until fully combined and smooth.
  3. Combine dry ingredients: In a separate bowl, whisk together flour, cream of tartar, baking soda, salt, cinnamon, nutmeg, ginger, and cloves until no lumps remain.
  4. Fold dry into wet: Add dry ingredients to wet mixture in two additions, folding gently with a rubber spatula until just combined. Do not overmix. Dough will be soft and slightly sticky.
