  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 pounds russet potatoes, peeled and diced into ½-inch cubes (about 4 medium potatoes)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • ¼ teaspoon garlic powder
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk (warm)
  • 2 cups sharp cheddar cheese, freshly shredded
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • Cooked and crumbled bacon (optional topping)
  • Extra shredded cheddar (optional topping)
  • Chopped green onions (optional topping)
  • Pickled jalapeños (optional topping)

Instructions

  1. Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add ground beef and cook, breaking it up, until browned, about 5-6 minutes. Spoon off all but 1 tablespoon of fat.
  2. Add diced onion to the pot and cook for 3-4 minutes until softened. Add minced garlic and cook for 30 seconds until fragrant.
  3. Pour in chicken broth and add diced potatoes, salt, black pepper, smoked paprika, and garlic powder. Stir, bring to a boil, then reduce heat to medium-low, cover, and simmer for 12-15 minutes until potatoes are fork-tender.
  4. While potatoes simmer, whisk flour into warm milk until smooth.
  5. Once potatoes are tender, slowly pour the milk-flour mixture into the pot, stirring constantly. Let it return to a gentle simmer and cook for 2-3 minutes until thickened, stirring occasionally.
  6. Reduce heat to low. Add shredded cheddar cheese, Dijon mustard, and Worcestershire sauce. Stir until cheese is fully melted and soup is smooth, about 2 minutes. Do not let it boil.
  7. Taste and adjust seasoning with more salt, pepper, or Worcestershire sauce as needed.
  8. Serve immediately, ladled into bowls and topped with desired toppings like bacon, extra cheese, green onions, or jalapeños.

Don’t skip the Dijon mustard—it brightens the dish without tasting like mustard. Warm the milk before adding to prevent clumping. Shred your own cheese for a smooth, creamy texture.
