  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Grease a 9×5-inch loaf pan with butter or nonstick spray. Optionally, line with parchment paper for easy removal.
  2. Mash the bananas in a large mixing bowl using a fork or potato masher until mostly smooth with a few small lumps.
  3. Add the melted butter and stir until combined.
  4. Mix in the sugar, egg, and vanilla extract. Stir vigorously for about 30 seconds until well combined and glossy.
  5. Sprinkle the flour, baking soda, and salt over the wet mixture. Fold gently with a spatula or wooden spoon just until no streaks of flour remain (10-15 strokes). Do not overmix.
  6. If using mix-ins, gently fold them in with a few more strokes.
  7. Pour the batter into the prepared pan and spread evenly. Tap the pan gently on the counter to settle the batter.
  8. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent with foil for the last 10-15 minutes.
  9. Cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely before slicing (about 1 hour).

Notes

Use very ripe (spotty) bananas for best sweetness and moisture. Do not overmix the batter to avoid tough bread. For extra moistness, add 1 tablespoon of plain yogurt or sour cream. To check doneness, internal temperature should be 200Β°F to 205Β°F (93Β°C to 96Β°C). Let cool completely before slicing for clean slices.
