  • 1/2 cup chicken broth (low-sodium preferred)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt (kosher salt recommended)
  • 1/2 teaspoon black pepper (freshly ground preferred)
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon paprika (smoked paprika optional)
  • 1 tablespoon fresh lemon juice (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Pat the chicken breasts dry with paper towels to remove excess moisture.
  2. In a small bowl, mix together garlic powder, onion powder, salt, black pepper, dried thyme, and paprika. Sprinkle the seasoning mixture evenly over both sides of the chicken breasts and rub in gently.
  3. Arrange the seasoned chicken breasts in a single layer at the bottom of the crockpot. Avoid overlapping if possible.
  4. Pour the chicken broth around the chicken (not directly on top) to keep the seasoning from washing off. Drizzle olive oil over the chicken.
  5. Cover the crockpot with the lid and set to LOW heat. Cook for 6-7 hours. Do not lift the lid during cooking.
  6. After 6 hours, check the internal temperature of the thickest part of the largest chicken breast with an instant-read thermometer. It should read 165Β°F. If not, cook for another 30 minutes and check again.
  7. Once done, remove the chicken from the crockpot using tongs and let it rest on a cutting board for 5-10 minutes.
  8. Slice the chicken against the grain for tender pieces, or use two forks to shred it. If shredding, you can do it right in the crockpot with the juices.
  9. Optional: Squeeze fresh lemon juice over the chicken before serving. Garnish with fresh parsley if desired.
