Instructions

  1. Preheat oven to 350Β°F (175Β°C). Grease two 9×5 inch loaf pans and line with parchment paper for easy removal.
  2. In a large bowl, whisk together vegetable oil, granulated sugar, and brown sugar until smooth.
  3. Add eggs one at a time, whisking well after each addition until the mixture is pale and creamy.
  4. Stir in pumpkin puree and vanilla extract.
  5. In a separate medium bowl, whisk together flour, baking soda, baking powder, pumpkin pie spice, and salt.
  6. Pour dry ingredients into wet ingredients and gently fold together with a spatula until just combined. Do not overmix.
  7. Gently fold in chocolate chips.
  8. Divide batter evenly between the two prepared loaf pans.
  9. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs.
  10. Let bread cool in pans for 10 minutes, then lift out using parchment sling and transfer to a wire rack to cool completely before slicing.

Notes

Do not overmix the batter to ensure a tender crumb. Measure flour by spooning it into the cup rather than scooping directly from the bag. For best results, let the bread cool completely before slicing to prevent it from being gummy. Can be stored at room temperature for 3 days or frozen for up to 3 months.
