  • 2 cups all-purpose flour

  • 1/2 tsp ground ginger
  • 1/4 tsp allspice
  • 1/2 cup all-purpose flour (for streusel)

  • 1/4 cup unsalted butter, cold and cubed (for streusel)

Instructions

  1. Preheat oven to 350Β°F (175Β°C). Grease a 9×5-inch loaf pan and line the bottom with parchment paper.
  2. Mash the overripe bananas in a large mixing bowl until mostly smooth.
  3. Add the softened butter, granulated sugar, brown sugar, eggs, vanilla extract, and pumpkin puree to the bananas. Beat on medium speed for 2 minutes until smooth and creamy.
  4. In a separate medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and allspice.
  5. Gradually add the dry ingredients to the wet mixture. Mix on low speed or fold with a spatula just until the flour disappears. Do not overmix.
  6. In a small bowl, combine the 1/2 cup flour, brown sugar, and cinnamon for the topping. Cut in the cold, cubed butter using a fork until the mixture resembles coarse crumbs.
  7. Pour the batter into the prepared loaf pan and smooth the top. Sprinkle the streusel topping evenly over the batter and press gently.
  8. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean. If the top browns too quickly, cover loosely with foil after 30 minutes.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Ensure bananas are very ripe (black peels) for maximum sweetness. Do not overmix the batter to avoid a dense texture. Keep butter cold for the streusel to ensure crunchy crumbs. The bread is best served at room temperature.
