  • 1 cup strong brewed coffee, cooled
  • 1 cup powdered sugar (for glaze)
  • 2 tbsp strong brewed coffee, cooled (for glaze)
  • 1 tbsp unsalted butter, melted (for glaze)
  • 1/4 tsp espresso powder (optional, for glaze)

Instructions

  1. Preheat oven to 350Β°F (175Β°C). Grease a 12-cup bundt pan thoroughly with baking spray or butter and flour.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, salt, and pumpkin pie spice.
  3. In a separate medium bowl, whisk pumpkin puree, oil, eggs, vanilla extract, and cooled brewed coffee until smooth.
  4. Pour wet mixture into dry mixture and gently fold together until just combined; do not overmix.
  5. Pour batter into prepared bundt pan and smooth the top.
  6. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs.
  7. Let cake cool in the pan for 15 minutes, then invert onto a cooling rack to cool completely.
  8. While cake cools, whisk powdered sugar, 2 tbsp brewed coffee, melted butter, and espresso powder until smooth and pourable.
  9. Drizzle glaze over completely cooled cake and let it drip down the sides before serving.

Notes

Ensure eggs and oil are at room temperature for best emulsion. Do not overmix the batter to avoid a tough texture. Grease the bundt pan thoroughly to prevent sticking. The coffee enhances chocolate flavor but does not make the cake taste like coffee. Cake tastes better the next day as flavors meld.
