  • 1 1/2 cups granulated sugar, divided
  • 1 cup cake flour, sifted (or gluten-free flour blend)
  • 1 1/2 teaspoons cream of tartar
  • 1 teaspoon vanilla extract
  • About 2 cups mixed fresh berries (strawberries, blueberries, raspberries) or any seasonal fruit
  • Optional: powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Place the oven rack in the lower third of the oven.
  2. Sift 1 cup of cake flour twice into a bowl to aerate and remove lumps. Set aside.
  3. In a large, clean mixing bowl, beat 12 large egg whites on medium speed until frothy.
  4. Sprinkle in 1 1/2 teaspoons of cream of tartar, then continue beating until soft peaks form.
  5. Gradually add 3/4 cup of granulated sugar, a tablespoon at a time, while continuing to beat. Increase speed to high and whip until stiff, glossy peaks form.
  6. Gently fold in 1 teaspoon of vanilla extract with a spatula.
  7. Sift the remaining 3/4 cup of sugar with the cake flour to combine. Gently fold the flour mixture into the egg whites in three additions using a rubber spatula, being careful not to deflate the batter.
  8. Pour the batter into an ungreased 10-inch angel food cake pan, smoothing the top gently.
  9. Bake for 35-40 minutes, or until the top springs back when lightly touched and a toothpick inserted near the center comes out clean.
  10. Immediately invert the pan onto a bottle or funnel to cool completely to prevent collapsing.
  11. Once fully cool (at least 1 hour), run a thin knife around the edges to loosen and carefully remove the cake.
  12. Top with washed and sliced fresh fruit. Dust lightly with powdered sugar if desired.

Notes

Use room temperature egg whites for best volume. Add sugar slowly to stabilize the foam. Do not grease the pan to allow proper rising. Fold flour gently to keep batter airy. Cool cake upside down to prevent collapsing. Fresh fruit topping should be added just before serving to avoid sogginess.
