High-Protein Peanut Butter Overnight Oats (Easy Recipe)

Creamy, satisfying overnight oats packed with 28 grams of protein per serving. This easy, no-cook breakfast is perfect for busy mornings and tastes like a peanut butter cup in oatmeal form.

  • 1 cup rolled oats (not quick oats)
  • 1 cup milk of choice (unsweetened almond milk or whole milk)
  • 1/2 cup plain Greek yogurt (or dairy-free coconut yogurt)
  • 2 tablespoons chia seeds
  • 2 tablespoons maple syrup or honey
  • 2 tablespoons creamy peanut butter (natural, no added sugar)
  • 1 scoop vanilla or unflavored protein powder (about 30 grams)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings: sliced banana, dark chocolate chips, crushed peanuts, extra drizzle of peanut butter

Instructions

  1. Mix the dry ingredients first. In your jar or container, add 1 cup rolled oats, 2 tablespoons chia seeds, and your scoop of protein powder. Give it a quick stir with a fork to break up any clumps.
  2. Whisk the wet ingredients separately. In a small bowl, combine 1 cup milk, 1/2 cup Greek yogurt, 2 tablespoons peanut butter, 2 tablespoons maple syrup, 1/2 teaspoon vanilla extract, and a pinch of salt. Whisk until the peanut butter is fully incorporated and the mixture is smooth.
  3. Pour the wet mixture over the dry ingredients. Pour it all into the jar with the oats and stir well, scraping the bottom and sides.
  4. Seal and refrigerate. Put the lid on your jar and place it in the refrigerator. Let it sit for at least 6 hours, but overnight is ideal (8-12 hours).
  5. Stir again before eating. In the morning, take the jar out of the fridge and give it a good stir. If the oats seem too thick, add a splash of milk to loosen them up.
  6. Add toppings and enjoy. Top with sliced banana, a drizzle of extra peanut butter, dark chocolate chips, or crushed peanuts. Eat cold or microwave for 45-60 seconds if you prefer warm oats.

Notes

For best texture, use rolled oats (not quick oats). Whisk peanut butter into milk first to avoid lumps. Flavors improve on day two. Store in fridge for up to 5 days; do not freeze. Add toppings fresh each morning.
