  • 2 tablespoons extra virgin olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 medium bell peppers (red and yellow), diced
  • 1 medium zucchini, diced
  • 2 medium carrots, chopped
  • 2 cups low sodium beef broth or bone broth
  • 3 tablespoons coconut aminos
  • 2 tablespoons tomato-free chili seasoning blend (chili powder, smoked paprika, cumin, oregano, pinch of cinnamon)
  • 1 tablespoon apple cider vinegar
  • Sea salt and black pepper to taste
  • Chopped fresh cilantro or parsley for garnish (optional)

Instructions

  1. Heat the olive oil in your pot over medium heat for about 5 minutes until shimmering but not smoking.
  2. Add the chopped onions and sautΓ© for 4-5 minutes until soft and translucent, stirring occasionally.
  3. Add the minced garlic and cook for another minute until fragrant, being careful not to burn it.
  4. Add the ground meat and break it up with your spoon. Cook until browned all over, about 7-8 minutes.
  5. Stir in the bell peppers, zucchini, and carrots. Cook for 5 minutes until they start to soften but still hold some bite.
  6. Sprinkle in the chili seasoning blend, salt, and pepper. Stir well to coat everything evenly with spices.
  7. Pour in the beef broth and coconut aminos. Bring the mixture to a gentle simmer, then reduce heat to low.
  8. Cover the pot and let it simmer for 25-30 minutes, stirring occasionally until the chili thickens and flavors meld.
  9. Remove the lid, taste, and adjust seasoning. Add the apple cider vinegar and stir well to brighten the flavors.
  10. Optional: Use an immersion blender on low speed to blend about a third of the chili for a thicker consistency without losing texture.
  11. Serve hot, garnished with fresh herbs if desired.

Notes

Brown the meat properly for best flavor. Add garlic after onions to avoid bitterness. Simmer gently and stir every 5-7 minutes to prevent sticking. Blend a portion for thicker texture if desired. Adjust seasoning to taste and add a splash of broth if chili is too thick.
