  • A pinch of sea salt

Instructions

  1. Rinse the watermelon and cut about 2 cups of seedless watermelon into bite-sized cubes.
  2. In a mixing bowl, combine 1 cup of small-curd cottage cheese, 1 tablespoon fresh lime juice, 1 teaspoon honey (optional), and a pinch of sea salt. Stir gently until creamy but still with small curds.
  3. Rinse and finely chop about a tablespoon of fresh mint leaves.
  4. In a serving bowl, add the watermelon cubes first, then spoon the cottage cheese mixture over the top.
  5. Sprinkle about 1 teaspoon of Tajin seasoning over the bowl, adjusting to taste.
  6. Optionally, gently stir to combine flavors or leave layered for visual appeal. Serve immediately.
