A quick and easy brunch board featuring toasted whole grain bread topped with whipped cream cheese, ripe avocado, and smoky salmon, perfect for fuss-free entertaining.

  • 8 slices whole grain bread, toasted
  • 2 medium ripe avocados, peeled and sliced
  • 8 oz (225 g) smoked salmon, thinly sliced
  • 8 oz (225 g) cream cheese, softened
  • 2 tbsp fresh lemon juice
  • 2 tbsp fresh dill, chopped
  • 2 tbsp capers (optional)
  • 1 small red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 2 tbsp extra virgin olive oil
  • Sea salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Whip the cream cheese: In a mixing bowl, combine softened cream cheese, fresh lemon juice, and chopped dill. Using an electric mixer, whip on medium speed for 2-3 minutes until light and fluffy. Taste and add salt and pepper as needed. If cream cheese isn’t softened enough, microwave for 10 seconds to avoid lumps.
  2. Toast the bread: Lightly toast whole grain bread slices until golden and crispy, about 3-4 minutes in a toaster or under a broiler. Set aside to cool slightly.
  3. Prepare avocado slices: Cut avocados in half, remove pits, and slice thinly. Toss gently with a small drizzle of lemon juice to prevent browning and add brightness.
  4. Arrange the board: Spread a generous layer of whipped cream cheese on each toast slice. Top with avocado slices and smoked salmon pieces. Scatter thinly sliced red onions, capers, and halved cherry tomatoes around the board for guests to add as they please.
  5. Final touches: Drizzle extra virgin olive oil over the assembled toasts and sprinkle with sea salt and freshly ground black pepper. Garnish with extra sprigs of dill for color.
  6. Serve immediately to enjoy the crispness of the toast and the fresh flavors.

Notes

If cream cheese isn’t softened, microwave briefly to avoid lumps. Use a serrated knife to slice bread without squishing. Toss avocado slices with lemon juice immediately to prevent browning. Smoked salmon is already cooked; handle gently to keep slices intact. For dairy-free, use coconut or almond-based cream cheese. Gluten-free bread can be substituted.
