These healthy no-bake granola bars come together in just 15 minutes with simple pantry ingredients. They’re chewy, satisfying, and perfect for busy weeks, lunchboxes, or afternoon slumps.

  • 2 cups old-fashioned rolled oats (use certified gluten-free if needed)
  • 1 cup creamy peanut butter (or almond butter, sunflower seed butter)
  • ½ cup honey (or maple syrup for vegan option)
  • 1 teaspoon vanilla extract
  • ¼ teaspoon fine sea salt
  • ½ cup dark chocolate chips (optional)
  • ¼ cup dried cranberries or chopped dried cherries (optional)
  • ¼ cup unsweetened shredded coconut (optional)
  • ¼ cup chopped almonds or pecans (optional)
  • 2 tablespoons chia seeds or flax seeds (optional)

Instructions

  1. Prep your pan. Line an 8×8-inch baking pan with parchment paper, leaving about 2 inches of overhang on two opposite sides. Set aside.
  2. Warm the wet ingredients. In a small saucepan over low heat, combine 1 cup creamy peanut butter and ½ cup honey. Stir constantly until smooth, warm, and well combined — about 2-3 minutes. Alternatively, microwave in 20-second bursts, stirring between each, until smooth.
  3. Add vanilla and salt. Remove from heat and stir in 1 teaspoon vanilla extract and ¼ teaspoon fine sea salt.
  4. Combine with oats. In a large mixing bowl, place 2 cups old-fashioned rolled oats. Pour the warm peanut butter mixture over the oats. Fold with a rubber spatula until every oat is coated and no dry spots remain.
  5. Add your mix-ins. Gently fold in 1 cup total of your chosen mix-ins (e.g., ½ cup dark chocolate chips, ¼ cup dried cranberries, ¼ cup chopped almonds). Fold just until distributed.
  6. Press into the pan. Transfer the mixture to the prepared pan. Place a piece of parchment paper or wax paper over the top and press down firmly and evenly using your hands or the bottom of a flat measuring cup. Press hard to compact the mixture.
  7. Chill. Place the pan in the refrigerator for at least 1 hour, or up to 2 hours for best results. For a quicker set, freeze for 30 minutes.
  8. Cut and serve. Once chilled and firm, use the parchment overhang to lift the block out of the pan. Place on a cutting board and cut into 12 bars using a sharp knife, wiping the blade clean between cuts. Store in the refrigerator or at room temperature.

Notes

Press the mixture firmly into the pan to ensure bars hold together. Chill for at least 1 hour. For cleaner cuts, wipe the knife clean between slices. Bars can be stored in the refrigerator for up to 2 weeks or frozen for up to 3 months.
