  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and freshly ground black pepper, to taste
  • Juice of half a lime
  • 1 large head butter lettuce or Bibb lettuce (leaves separated and rinsed)
  • 1 cup fresh blueberries
  • 1 cup diced strawberries or cherry tomatoes
  • 1 ripe avocado, sliced or cubed
  • 1/2 cup crumbled feta cheese (optional)
  • 1/4 cup chopped fresh cilantro or parsley
  • 1/4 cup thinly sliced red onion
  • Optional: a drizzle of plain Greek yogurt or a light vinaigrette for topping

Instructions

  1. Gently separate the leaves from the head of butter lettuce, rinse under cold water, and pat dry with paper towels or a salad spinner. Set aside on a large platter lined with a clean kitchen towel to absorb any extra moisture.
  2. Heat 1 tablespoon of olive oil over medium heat in a skillet. Add the finely chopped onion and cook for about 3-4 minutes until softened and translucent.
  3. Add the minced garlic and cook another 30 seconds until fragrant, being careful not to burn it.
  4. Add the ground turkey to the skillet, breaking it apart with a wooden spoon. Cook for 6-8 minutes, stirring occasionally, until the meat is no longer pink and starts to brown in spots.
  5. Stir in smoked paprika, ground cumin, cayenne pepper (if using), salt, and black pepper. Mix well to coat the meat evenly. Cook for another 2 minutes to let the spices bloom.
  6. Remove the skillet from heat and squeeze the juice of half a lime over the turkey. Stir to combine.
  7. While the turkey cooks, chop the strawberries or cherry tomatoes, slice the avocado, crumble the feta, thinly slice the red onion, and roughly chop the herbs. Place each ingredient in separate bowls to create your toppings bar.
  8. Arrange the lettuce leaves on a large platter or tray, then surround them with bowls of spiced turkey and all the toppings. Add a small bowl of Greek yogurt or vinaigrette for drizzling if desired.
  9. Encourage everyone to build their own wraps by spooning turkey and toppings into lettuce leaves, folding them like little boats.

Notes

Do not overcrowd the pan when cooking turkey to ensure proper browning. Dry lettuce leaves thoroughly to keep them crisp. Slice avocado last to prevent browning. If turkey seems dry, add a splash of chicken broth or olive oil before serving. Prepare turkey ahead and reheat gently for convenience. Customize toppings and wraps to suit dietary preferences.
