A quick and easy fresh peach salsa with a perfect balance of sweet, spicy, and herbal flavors, ideal for summer parties and snacks.

  • 2 cups fresh ripe peaches, diced (about 2 medium peaches)
  • 1 medium jalapeño pepper, finely chopped (seeds removed for milder salsa or kept for extra heat)
  • ¼ cup fresh cilantro leaves, torn or roughly chopped
  • ¼ cup red onion, finely diced
  • 2 tablespoons fresh lime juice (from 1 lime)
  • ¼ teaspoon salt, or to taste
  • Pinch of ground black pepper (optional)
  • 1 tablespoon extra virgin olive oil
  • 1 small clove garlic, minced (optional)

Instructions

  1. Wash peaches thoroughly and dice into roughly ½-inch cubes.
  2. Slice jalapeño in half lengthwise, remove seeds if desired, then finely dice.
  3. Peel and finely dice ¼ cup of red onion.
  4. Tear fresh cilantro leaves by hand into bite-sized pieces.
  5. Mince one small clove of garlic if using.
  6. In a medium mixing bowl, combine diced peaches, jalapeño, red onion, cilantro, and garlic.
  7. Add fresh lime juice and extra virgin olive oil to the bowl.
  8. Season with salt and a pinch of black pepper.
  9. Gently toss all ingredients together without mashing the fruit.
  10. Let the salsa rest at room temperature for 5-10 minutes to allow flavors to meld.
  11. Taste and adjust seasoning as needed before serving.

Notes

If peaches are extra juicy, drain some excess liquid before mixing to avoid watery salsa. Keep salsa chilled if not serving immediately and stir before serving. Remove jalapeño seeds for less heat or keep for more spice. Salsa can be stored in an airtight container in the fridge for up to 3 days. Freezes well but texture may change slightly.
