Fresh Watermelon Feta Mint Skewers

A quick and easy 5-minute summer snack combining sweet watermelon, salty feta, fresh mint, and a tangy balsamic reduction drizzle for a refreshing and crowd-pleasing appetizer.

Ingredients

  • Seedless watermelon, cut into 1-inch cubes
  • Feta cheese, crumbled or cut into 1-inch cubes
  • Fresh mint leaves, whole, washed and dried
  • Β½ cup balsamic vinegar
  • 1 tablespoon sugar
  • Wooden or bamboo skewers, 6 to 8 inches long

Instructions

  1. Prepare the balsamic reduction: Pour Β½ cup (120 ml) balsamic vinegar and 1 tablespoon (12 grams) sugar into a small saucepan. Heat over medium-low heat, stirring occasionally, and simmer until reduced by half and syrupy, about 10-12 minutes. Remove from heat and let cool.
  2. Cut the watermelon into 1-inch cubes and place in a bowl or plate.
  3. Cut feta cheese into 1-inch cubes or crumble it.
  4. Wash and dry fresh mint leaves.
  5. Assemble the skewers by threading one watermelon cube, one mint leaf, and one feta cube onto each skewer. Repeat if skewer length allows, finishing with watermelon on top.
  6. Arrange skewers on a serving platter and drizzle the cooled balsamic reduction generously over them just before serving.

Notes

Reduce balsamic vinegar slowly over medium-low heat to avoid burning. Assemble skewers close to serving time to keep mint fresh and prevent sogginess. Soak skewers in water before grilling to prevent burning. Sprinkle flaky sea salt over skewers after drizzling balsamic for enhanced flavor.
