  • 1 cup (200 grams) granulated sugar
  • 1 cup (240 ml) fresh lemon juice (about 45 lemons)
  • 1012 fresh basil leaves
  • 4 cups (960 ml) sparkling water, chilled
  • Ice cubes
  • Optional: lemon slices or strawberry slices for garnish
  • Optional: honey or agave syrup to replace sugar

Instructions

  1. Make the Strawberry Simple Syrup: In a medium saucepan, combine the sliced strawberries and sugar with 1 cup (240 ml) water. Bring to a gentle boil over medium heat, stirring occasionally to dissolve the sugar (about 5-7 minutes). Once boiling, reduce to low and simmer for another 10 minutes until the strawberries are soft and the syrup thickens slightly.
  2. Strain the Syrup: Pour the mixture through a fine mesh sieve or cheesecloth into a bowl, pressing gently to extract as much liquid as possible while leaving the seeds and pulp behind. Set the syrup aside to cool completely (about 20 minutes).
  3. Juice the Lemons: While the syrup cools, squeeze fresh lemons until you have 1 cup (240 ml) of juice. Remove seeds and set aside.
  4. Muddle the Basil: In the bottom of your pitcher, place the basil leaves. Using a muddler or the back of a wooden spoon, press gently to bruise the leaves and release their aromatic oils. Don’t pulverize—just enough to wake up those flavors.
  5. Combine and Chill: Add the cooled strawberry syrup and lemon juice to the pitcher with basil. Stir gently to combine. Refrigerate for at least 30 minutes to let the flavors meld and the basil infuse.
  6. Add Sparkling Water and Serve: Just before serving, pour in 4 cups (960 ml) of chilled sparkling water. Stir gently to mix. Fill glasses with ice cubes, pour the sparkling strawberry lemonade with basil over, and garnish with lemon or strawberry slices if desired.

Notes

Simmer syrup gently to avoid caramelizing sugar. Strain thoroughly to remove seeds for smooth texture. Muddle basil gently to avoid bitterness. Chill syrup and lemon juice mixture before adding sparkling water to maintain fizz. Adjust sweetness or tartness by adding water or lemon juice as needed. Use fresh strawberries for best flavor; frozen can be used in a pinch.
