A fresh, tangy, and crisp cucumber tomato salad tossed in a zesty Italian dressing with a touch of honey and garlic. Perfect for quick, light meals or as a refreshing side for warm weather gatherings.

Ingredients

Scale
  • 2 medium cucumbers, thinly sliced (preferably English cucumbers)
  • 1 pint cherry or grape tomatoes, halved
  • 1/4 small red onion, thinly sliced
  • 2 tablespoons fresh parsley, chopped
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon honey
  • 1 small garlic clove, minced
  • 1 teaspoon dried Italian seasoning
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Prepare the vegetables: slice cucumbers thinly (about 1/4-inch slices), halve cherry tomatoes, thinly slice red onion, and chop fresh parsley. Set aside.
  2. Make the zesty Italian dressing: whisk together olive oil, red wine vinegar, honey, minced garlic, dried Italian seasoning, salt, and pepper in a small bowl. Adjust seasoning to taste.
  3. Pour the dressing over the prepared vegetables in a medium mixing bowl. Gently toss with salad tongs or two large spoons until evenly coated.
  4. Optional: Let the salad rest for 10 minutes at room temperature to allow flavors to meld, or serve immediately for maximum crunch.

Notes

If cucumbers are watery, sprinkle with salt and drain in a colander for 5-10 minutes, then pat dry before mixing to prevent sogginess. Dressing can be adjusted by adding more honey or vinegar to balance flavor. Soaking onion slices in cold water for 10 minutes can mellow sharpness. Salad can be made ahead and refrigerated; toss gently before serving. For vegan option, substitute honey with maple syrup or agave nectar.
