A quick and easy no-cook peach salsa that combines juicy peaches with a spicy kick of jalapeño and fresh lime juice, perfect for a refreshing summer snack.

  • 3 medium ripe but firm fresh peaches, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1 small jalapeño pepper, seeded and finely diced
  • 2 tablespoons fresh cilantro, chopped
  • Juice of 1 large lime (about 2 tablespoons)
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon salt, or to taste
  • Pinch of freshly ground black pepper (optional)

Instructions

  1. Wash and prep produce: rinse peaches, tomatoes, cilantro, and lime under cold water and pat dry.
  2. Dice the peaches into small, bite-sized pieces (about 1/2-inch cubes).
  3. Halve the cherry tomatoes; quarter if large.
  4. Finely chop the red onion.
  5. Slice open the jalapeño, remove seeds if desired, and finely dice.
  6. Roughly chop the cilantro leaves and tender stems.
  7. In a mixing bowl, gently toss peaches, tomatoes, onion, jalapeño, and cilantro together.
  8. Add lime juice and olive oil, then sprinkle salt and pepper. Toss gently to combine.
  9. Taste and adjust seasoning with more salt, lime juice, or a touch of sugar if needed.
  10. Serve immediately or chill for 15-30 minutes to let flavors meld. Stir gently before serving.

Notes

Use peaches that are ripe but firm to avoid mushy salsa. Stir gently to keep peaches intact. Add lime juice just before serving to slow browning. Can substitute cilantro with flat-leaf parsley or fresh basil/mint for different flavors. Best served fresh or chilled within 2 days.
