  • 3 medium-sized fresh nectarines, ripe but firm, sliced into wedges
  • 1 cup (about 240 ml) small-curd cottage cheese
  • 1012 fresh basil leaves, torn or roughly chopped
  • 2 tablespoons honey (adjust to taste)
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon extra virgin olive oil (optional)
  • A pinch of salt
  • A pinch of freshly ground black pepper (optional)

Instructions

  1. Wash and prep the nectarines: Rinse under cool water and pat dry. Slice each nectarine into 8 wedges, taking care not to bruise the flesh.
  2. Tear the basil leaves gently with your fingers to release oils without bruising them too much. Set aside.
  3. Make the dressing: In a small bowl, whisk together honey, fresh lemon juice, and olive oil until combined. Add a pinch of salt and pepper. Taste and adjust sweetness or acidity as you like.
  4. Combine salad components: In your mixing bowl, add the sliced nectarines, cottage cheese, and basil. Pour the dressing over the top.
  5. Toss gently: Use a large spoon or spatula to fold everything carefully, so the nectarines stay intact and the dressing coats each bite lightly.
  6. Plate and serve: Transfer to a bowl or individual plates. For an extra touch, drizzle a little more honey on top or sprinkle with cracked black pepper.

Notes

Use ripe but firm nectarines to avoid mushiness. Fold salad gently to keep fruit wedges intact. Dressing can be made ahead and added just before serving. Refrigerate for 10-15 minutes if you prefer chilled salad but avoid letting it sit too long to prevent watery texture. Substitute ricotta or Greek yogurt for cottage cheese, or use dairy-free alternatives for a vegan version. Maple syrup can replace honey.
