  • 1 can (15 oz / 425 g) black beans, drained and rinsed
  • 1 can (15 oz / 425 g) sweet corn, drained (or 1 cup fresh corn kernels)
  • 1 cup cherry tomatoes, quartered
  • 1 small red bell pepper, diced
  • 1/2 small red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • 3 tablespoons fresh lime juice (about 2 limes)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon honey or agave syrup
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper

Instructions

  1. Drain and rinse the black beans and corn thoroughly.
  2. Quarter the cherry tomatoes, dice the red bell pepper, finely chop the red onion, and mince the jalapeño.
  3. Chop the cilantro last to keep it fresh.
  4. In a small bowl or jar, whisk together fresh lime juice, olive oil, ground cumin, honey, salt, and black pepper until well emulsified.
  5. In a large mixing bowl, gently toss the black beans, corn, tomatoes, bell pepper, onion, jalapeño, and cilantro.
  6. Pour the dressing over the mixture and stir gently to coat evenly without mashing the ingredients.
  7. Optional: Cover and refrigerate for at least 15 minutes to let flavors meld and soften the jalapeño heat.
  8. Serve chilled or at room temperature with tortilla chips, sliced cucumbers, or as a topping for grilled chicken or tacos.

Notes

Drain canned beans and corn thoroughly to avoid watery dip. Chop ingredients uniformly for balanced texture. Adjust jalapeño heat to taste. Adding diced avocado before serving adds creaminess. Flavors improve after chilling for a few hours. Serve with sturdy tortilla chips or fresh veggies.
