Instructions

  1. Drain and rinse the canned black beans and fresh or thawed corn kernels in a colander under cold water. Shake off excess water. (3 minutes)
  2. Finely dice the red bell pepper, halve the cherry tomatoes, mince the jalapeño (if using), and finely chop the red onion and cilantro. Keep pieces small and uniform. (7 minutes)
  3. In a mixing bowl, combine the black beans, corn, tomatoes, bell pepper, red onion, jalapeño, and cilantro. Toss gently to evenly distribute ingredients without crushing. (2 minutes)
  4. In a small bowl, whisk together the fresh lime juice, olive oil, ground cumin, salt, and black pepper until combined. Adjust seasoning to taste. (3 minutes)
