  • 3 large eggs (room temperature)
  • 1 cup fresh spinach, roughly chopped
  • 1/2 cup shredded cheese (sharp cheddar, Gruyère, or mozzarella)
  • 2 tablespoons milk (whole or 2%, or unsweetened almond milk for dairy-free)
  • 1 tablespoon unsalted butter
  • 1/4 teaspoon salt
  • Freshly ground black pepper, to taste
  • 1/8 teaspoon garlic powder (optional)

Instructions

  1. Heat half the butter over medium heat in a skillet. Add chopped spinach and sauté for 1-2 minutes until just wilted. Remove from pan and set aside.
  2. In a mixing bowl, crack the eggs and add milk, salt, pepper, and garlic powder if using. Whisk vigorously for about 2 minutes until pale yellow and frothy.
  3. Wipe the skillet clean and melt the remaining butter over medium-low heat. The pan should be hot enough that a drop of water sizzles gently but butter does not brown.
  4. Pour the egg mixture into the skillet. Let cook undisturbed for about 1 minute until edges start to set. Use a spatula to gently pull edges toward the center, letting uncooked egg flow underneath.
  5. When eggs are mostly set but still slightly runny on top (after 2-3 minutes), evenly spread sautéed spinach and shredded cheese over half the omelet.
  6. Carefully fold the omelet in half over the filling. Cook for another 30 seconds to 1 minute until cheese melts and eggs are cooked through but still tender.
  7. Slide the omelet onto a warmed plate and serve immediately.

Notes

Use room temperature eggs and whisk vigorously to incorporate air for fluffiness. Cook on medium-low heat to avoid browning or sticking. If using frozen spinach, thaw and squeeze out excess moisture before sautéing. For dairy-free, substitute milk and cheese with plant-based alternatives.
