  • 1 lb ground beef (80/20 preferred)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp chili powder
  • ½ tsp dried oregano
  • Salt and freshly ground black pepper, to taste
  • 1 tbsp tomato paste
  • 2 tbsp water
  • 6 cups sturdy tortilla chips
  • 2 cups shredded sharp cheddar cheese or Mexican blend
  • 1 cup black beans, drained and rinsed (optional)
  • 1 cup fresh pico de gallo or chunky salsa
  • ½ cup sliced jalapeños (fresh or pickled)
  • ½ cup sliced black olives
  • ¼ cup chopped fresh cilantro
  • ½ cup sour cream or Greek yogurt
  • 1 ripe avocado, diced or mashed

Instructions

  1. Finely chop the onion, mince the garlic, dice the avocado, and slice jalapeños and olives. Rinse and drain the black beans if using. Have shredded cheese and chips ready.
  2. Heat a large skillet over medium-high heat. Add ground beef and chopped onion. Break meat apart and cook until beef is browned and onions are translucent, about 7 minutes.
  3. Add minced garlic, cumin, smoked paprika, chili powder, oregano, salt, and pepper. Stir and toast spices for about 1 minute.
  4. Mix in tomato paste and water. Cook for another 3-4 minutes until mixture thickens slightly. Adjust seasoning and add more water if needed.
  5. On a baking sheet or oven-safe dish, spread half the tortilla chips evenly. Spoon half the seasoned beef over chips, then sprinkle half the black beans and cheese.
  6. Repeat layers with remaining chips, beef, beans, and cheese.
  7. Place under a preheated broiler or in a 375°F oven. Melt cheese for 5-7 minutes until bubbly and lightly golden. Watch closely to avoid burning.
  8. Remove from oven and top evenly with pico de gallo or salsa, jalapeños, olives, cilantro, sour cream, and diced avocado. Serve immediately.

Notes

Do not overcrowd the skillet when browning beef to ensure proper searing. Toast spices briefly to release aroma but avoid burning. Layer chips and toppings just before baking to prevent sogginess. Watch broiler closely when melting cheese. Add fresh toppings after baking for best texture. Beef mixture can be cooked ahead and refrigerated.
