Ingredients

  • Fresh apricots โ€“ halved and pitted; ripe but firm apricots work best
  • Goat cheese โ€“ soft and creamy, room temperature for easy spreading
  • Honey โ€“ a drizzle to add sweetness and a glossy finish
  • Fresh thyme or mint leaves โ€“ finely chopped
  • Olive oil โ€“ for brushing apricots before grilling
  • Freshly ground black pepper โ€“ a light sprinkle
  • Sea salt โ€“ to taste, preferably flaky salt like Maldon
  • Optional: Chopped toasted walnuts or pistachios
  • Optional: Balsamic glaze

Instructions

  1. Preheat your grill or grill pan to medium-high heat, around 375ยฐF (190ยฐC).
  2. Rinse and carefully halve the apricots, removing the pits. Brush the cut sides lightly with olive oil.
  3. In a small bowl, combine 1 tablespoon olive oil, about 1 teaspoon finely chopped fresh thyme, a pinch of sea salt, and freshly ground black pepper. Set aside.
  4. Place apricot halves cut side down on the grill. Grill for 3-4 minutes until golden char marks appear.
  5. Turn apricots over and brush the grilled side with the herb oil mixture. Grill for another 2-3 minutes until tender but still holding shape.
  6. Transfer apricots to a serving platter and let cool for 2 minutes.
  7. Spread creamy goat cheese generously over the grilled side of each apricot half.
  8. Drizzle honey over the cheese-topped apricots and sprinkle with additional fresh herbs or chopped nuts if desired.
  9. Serve immediately warm or at room temperature.

Use ripe but firm apricots to hold shape on the grill. Brush apricots with olive oil to prevent sticking and encourage caramelization. Goat cheese should be at room temperature for easy spreading. Watch grill closely to avoid burning fruit sugars. Add cheese and honey just before serving to avoid sogginess. For dairy-free, substitute goat cheese with plant-based creamy cheese and honey with maple syrup.
