  • 2 large limes, juiced (about 4 tablespoons fresh lime juice)
  • 3 cloves garlic, minced
  • 1/4 cup olive oil (extra virgin)
  • 1 teaspoon ground cumin (optional)
  • 1 teaspoon chili powder
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon honey or agave syrup
  • 1.5 to 2 pounds flank steak

Instructions

  1. Prepare the Marinade: In a food processor or blender, combine cilantro, lime juice, garlic, olive oil, cumin, chili powder, salt, black pepper, and honey. Pulse until smooth but slightly textured, about 30 seconds.
  2. Marinate the Steak: Place flank steak in a shallow dish or resealable bag. Pour marinade over steak, coat evenly. Refrigerate for at least 1 hour, up to 4 hours. Do not marinate longer than 6 hours.
  3. Preheat the Grill: Heat grill to medium-high (about 400Β°F/204Β°C). Clean and oil grates.
  4. Grill the Steak: Remove steak from marinade, let excess drip off. Grill 4-5 minutes per side for medium-rare (130-135Β°F internal temperature). Flip only once.
  5. Rest the Steak: Remove from grill, tent with foil, rest 5-10 minutes.
  6. Slice and Serve: Slice thinly against the grain and serve immediately.

Notes

Do not marinate longer than 6 hours to avoid meat texture changes. Use a hot grill and flip steak only once for best sear. Rest steak after grilling to keep juices locked in. Slice against the grain for tenderness. If no grill available, use a grill pan or broil in oven.
