  • 23 pounds pork baby back ribs
  • Smoky spice rub (smoked paprika, brown sugar, garlic powder, salt, black pepper, pinch of cayenne optional)
  • 1/4 cup honey or your favorite BBQ sauce

Instructions

  1. Preheat your oven to 275Β°F (135Β°C) or prepare your grill for indirect cooking at the same temperature.
  2. Remove the silver skin membrane from the back of the ribs if attached.
  3. Generously coat both sides of the ribs with the smoky spice rub, pressing it into the meat.
  4. Place ribs on a large sheet of aluminum foil, meat side up, and wrap tightly to seal in moisture.
  5. Place wrapped ribs on a baking sheet or grill grate and cook for 2.5 to 3 hours until tender.
  6. Carefully unwrap ribs and brush honey or BBQ sauce evenly over them.
  7. Return ribs uncovered to oven or grill at 350Β°F (175Β°C) and cook for another 15-20 minutes to caramelize the glaze.
  8. Let ribs rest for 5-10 minutes before slicing and serving.

Notes

Removing the membrane is optional but improves tenderness. Wrapping ribs tightly in foil is essential to keep them moist. Apply glaze only in the last 15-20 minutes to avoid burning sugars. For extra tenderness, marinate ribs in the rub overnight. A light spritz of apple juice during cooking can add moisture if ribs seem dry.
