  • 4 cups fresh baby spinach, loosely packed (washed and dried)
  • 4 large eggs, room temperature
  • 1 tablespoon olive oil or unsalted butter
  • 1 clove garlic, minced (optional)
  • Salt and pepper to taste (about ½ teaspoon salt and a few grinds of black pepper)
  • ½ cup shredded sharp cheddar, feta, or mozzarella cheese
  • Pinch of red pepper flakes (optional)
  • Chopped fresh herbs like parsley or chives for garnish (optional)

Instructions

  1. Rinse 4 cups of fresh baby spinach and dry thoroughly using a salad spinner or paper towels.
  2. Heat an 8 to 10-inch skillet over medium heat and add 1 tablespoon of olive oil or butter. Warm until shimmering or melted but not smoking (about 1-2 minutes).
  3. Add minced garlic (if using) and stir for about 30 seconds until fragrant, being careful not to burn it.
  4. Add the spinach and stir gently. Cook for 2-3 minutes until wilted but still bright green. Season with a pinch of salt and pepper.
  5. Push the spinach to the sides of the skillet, creating 4 small indentations in the center.
  6. Crack one egg into each indentation. Sprinkle salt, pepper, and red pepper flakes on top. Cover the skillet with a lid and cook for about 3-5 minutes depending on desired yolk consistency.
  7. Once the egg whites are mostly set but yolks still soft, sprinkle cheese over the eggs and spinach. Replace the lid and cook for another minute to melt the cheese.
  8. Remove from heat and sprinkle chopped fresh herbs over the top. Serve immediately.

Notes

Dry spinach thoroughly before sautéing to avoid soggy eggs. Cook eggs gently with the lid on for perfectly set whites and runny yolks. If eggs cook too fast on the bottom, lower heat and keep lid on. For fully cooked yolks, cook longer or briefly broil while watching closely. Avoid overcrowding the skillet to prevent steaming and mushy texture. Leftovers can be stored in the fridge for up to 2 days and reheated gently.
