  • 1 cup frozen corn
  • 2 cans (4 oz each) diced green chiles
  • 4 cups low-sodium chicken broth
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • Salt and black pepper to taste (start with 1 tsp salt and ½ tsp pepper)
  • 4 oz cream cheese, softened and cut into cubes
  • Juice of 1 lime
  • ¼ cup fresh cilantro, chopped (plus more for garnish)
  • Optional toppings: diced avocado, shredded Monterey Jack cheese, sour cream or Greek yogurt, tortilla chips, sliced jalapeños, extra lime wedges

Instructions

  1. Prep the aromatics: Dice the onion and mince the garlic. Can be done the night before.
  2. Layer the ingredients in the slow cooker: Place chicken breasts in the bottom. Add onion, garlic, drained white beans, frozen corn, and diced green chiles on top. Do not stir.
  3. Add seasonings and broth: Sprinkle cumin, oregano, chili powder, salt, and pepper over the top. Pour chicken broth around the edges, not directly over the spices.
  4. Cook on low for 6-7 hours or high for 3-4 hours, until chicken is tender and reaches 165°F internally.
  5. Shred the chicken: Remove chicken from slow cooker, shred with two forks, and return to pot.
  6. Add cream cheese: Stir in cubed cream cheese until fully melted and incorporated, about 2-3 minutes.
  7. Finish with lime and cilantro: Squeeze lime juice into chili, stir in cilantro. Taste and adjust seasoning.
  8. Serve immediately or keep warm on the ‘warm’ setting. Ladle into bowls and let guests add toppings.
