This easy slow cooker chili cheese dip is the ultimate party appetizer. Made with cream cheese, chili, cheddar, and Rotel, it’s creamy, cheesy, and perfect for game day or any gathering.

  • 2 cans (15 oz each) chili with beans
  • 1 block (8 oz) cream cheese, softened
  • 2 cups shredded sharp cheddar cheese
  • 1 can (10 oz) Rotel diced tomatoes and green chiles, undrained
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 cup pickled jalapeños, chopped (optional)

Instructions

  1. Cut the softened cream cheese into 8 cubes.
  2. Place the cream cheese cubes in an even layer across the bottom of a 3-4 quart slow cooker.
  3. Open both cans of chili and dump them over the cream cheese. Spread into an even layer.
  4. Sprinkle chili powder, garlic powder, and onion powder evenly over the chili.
  5. Pour the entire can of Rotel (including juice) over the chili.
  6. Sprinkle shredded cheddar cheese evenly over the top. If using, scatter pickled jalapeños over the cheese.
  7. Cover and cook on low for 2 hours.
  8. Stir well until everything is melted and combined. If too thick, stir in a tablespoon of milk or water. If too thin, cook uncovered for 15-20 minutes.
  9. Switch slow cooker to warm setting for serving.
  10. Serve with tortilla chips, Fritos, pretzel chips, or sliced baguette.

Notes

For a spicier dip, use hot Rotel or add a diced jalapeño. For a vegetarian version, use vegetarian chili and check Rotel label. To make ahead, assemble in the slow cooker insert and refrigerate overnight, then cook as directed. Leftovers can be refrigerated for up to 4 days and reheated in a saucepan over low heat.
