These easy simple popsicles with juice are a quick, refreshing summer treat made with a blend of fruit juices, optional sweeteners, and extras like fresh fruit or yogurt. Perfect for cooling down on hot days with minimal prep.

Ingredients

Scale
  • 35 types of fruit juices (choose from orange juice, apple juice, pineapple juice, cranberry juice, grape juice)
  • 1 tablespoon fresh lemon or lime juice
  • Optional sweetener: honey, agave syrup, or simple syrup, to taste
  • Optional extras: fresh mint leaves, small fruit chunks (berries, kiwi), plain Greek yogurt or dairy-free coconut yogurt

Instructions

  1. Gather your juices and extras. Measure about 1 cup (240 ml) of your chosen fruit juices. Mix different juices in a bowl for a custom blend.
  2. Add 1 tablespoon (15 ml) fresh lemon or lime juice to brighten the flavors.
  3. Taste your juice blend and sweeten if needed with 1 to 2 teaspoons (5 to 10 ml) of honey or agave syrup. Mix well.
  4. Optional: add about 1/4 cup (40 grams) small fruit chunks or 1/4 cup (60 grams) plain Greek yogurt for texture and creaminess.
  5. Pour mixture into popsicle molds, leaving a small gap at the top to allow for expansion.
  6. Insert sticks and cover molds tightly with lids or foil to avoid freezer odors.
  7. Freeze for at least 4-6 hours, preferably overnight for firm popsicles.
  8. To serve, run warm water over the mold sides to loosen the popsicles without melting them.

Notes

Leave a small gap in molds to allow for juice expansion during freezing. Use silicone molds for easier unmolding. Run warm water on mold sides to release popsicles without melting. Adjust sweetness before freezing as freezing dulls sweetness. For creamier texture, swirl in yogurt gently. Popsicles freeze best overnight for firm texture.
