  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lemon juice
  • 12 teaspoons sugar or sweetener (optional)
  • Granola or nuts for topping (optional)

Instructions

  1. In a mixing bowl, combine 1 ½ cups of mixed berries with 1 tablespoon fresh lemon juice and 1-2 teaspoons sugar or sweetener if using. Toss gently to coat and let sit at room temperature to macerate.
  2. In a separate bowl, mix 2 cups plain Greek yogurt with 2 tablespoons honey or maple syrup and 1 teaspoon vanilla extract until smooth and creamy. Adjust sweetness to taste.
  3. Choose serving glasses or jars. Start with a spoonful of sweetened yogurt at the bottom, then add a layer of macerated berries. Repeat layers until glasses are filled, finishing with berries on top.
  4. Optionally, sprinkle a tablespoon of granola or chopped nuts on top for added crunch.
  5. Serve immediately or refrigerate for 30 minutes to let flavors meld. Cover with plastic wrap if chilling.
