  • 3 large bell peppers (any color combination), sliced into 1/2-inch strips
  • 1 large yellow onion, sliced into 1/2-inch thick strips
  • 3 tablespoons olive oil
  • 2 teaspoons chili powder (ancho preferred)
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano (Mexican oregano preferred)
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • Salt and black pepper to taste (about 1 teaspoon salt and 1/2 teaspoon pepper)
  • 8 small flour or corn tortillas, warmed (for serving)
  • 1/2 cup sour cream or Greek yogurt (for serving)
  • 1/2 cup fresh salsa or pico de gallo (for serving)
  • 1 avocado, sliced (for serving)
  • Fresh cilantro, chopped (for garnish)
  • 1 lime, cut into wedges (for serving)

Instructions

  1. Preheat your oven to 425°F (220°C). Place the oven rack in the middle position.
  2. Line a large sheet pan (18×13 inches) with parchment paper or aluminum foil. If using foil, lightly spray with cooking oil.
  3. Wash and dry the bell peppers. Cut off tops, remove seeds and membranes, then slice into 1/2-inch thick strips. Peel the onion and slice into 1/2-inch thick half-moons.
  4. Slice the smoked sausage into 1/2-inch thick rounds on a slight diagonal.
  5. In a small bowl, combine chili powder, cumin, smoked paprika, garlic powder, onion powder, oregano, cayenne (if using), salt, and pepper. Stir to combine.
  6. In a large mixing bowl, combine sliced peppers, onions, and sausage rounds. Drizzle with olive oil and sprinkle the seasoning mixture over the top. Toss until everything is evenly coated.
  7. Pour the mixture onto the prepared sheet pan and spread into a single, even layer. Avoid overcrowding; use a second pan if necessary.
  8. Roast for 20 minutes. After 10 minutes, stir and flip the sausage pieces with a spatula or tongs.
  9. Check for doneness: peppers should be tender with charred edges, and sausage should be nicely browned. For extra char, broil for 2-3 minutes, watching closely.
  10. Remove from oven and let rest for 2-3 minutes. Serve immediately with warm tortillas, sour cream, salsa, avocado, cilantro, and lime wedges.

Notes

For extra crispy sausage edges, skip the parchment and let sausage sit directly on the pan. To prevent steaming, ensure the pan is not overcrowded. The dish tastes even better the next day as flavors meld. For a vegetarian version, use plant-based sausage and add extra veggies like zucchini or mushrooms.
