  • 4 salmon fillets (6 ounces each)
  • 3 tablespoons pure maple syrup
  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • ½ teaspoon salt

  • 1 pound asparagus
  • 1 tablespoon olive oil
  • ¼ teaspoon salt
  • Pinch of black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Position the rack in the middle of the oven. Line your sheet pan with parchment paper or foil for easy cleanup.
  2. Prep the asparagus. Rinse the asparagus under cold water and pat dry. Snap off the woody ends by holding a spear near the bottom and bending until it breaks naturally. Toss the asparagus with 1 tablespoon olive oil, ¼ teaspoon salt, and a pinch of pepper right on the sheet pan. Spread them out in a single layer on one side of the pan.
  3. Give the asparagus a head start. Roast the asparagus alone for 5 minutes.
  4. Make the maple-Dijon glaze. While the asparagus is roasting, whisk together the maple syrup, Dijon mustard, 1 tablespoon olive oil, minced garlic, ½ teaspoon salt, and ¼ teaspoon pepper in a small bowl. Taste it and adjust seasoning if needed.
  5. Prep the salmon. Pat the salmon fillets dry with paper towels. Place the fillets on the other side of the sheet pan, leaving a little space between each one.
  6. Brush on the glaze. Using a pastry brush or spoon, coat the top and sides of each salmon fillet with about half the glaze. Reserve the remaining glaze for later.
  7. Roast for 8 minutes. Pop the whole pan back in the oven and set a timer.
  8. Brush on the remaining glaze. After 8 minutes, pull the pan out and brush the remaining glaze over the salmon.
  9. Roast for another 4-6 minutes. Return the pan to the oven and cook until the salmon is flaky and opaque in the center. For 1-inch thick fillets, 4 minutes is usually perfect. For thicker pieces, go 6 minutes. The asparagus should be tender-crisp with slightly browned edges.
  10. Let it rest for 2 minutes. Pull the pan out of the oven and let everything rest on the pan for a couple of minutes.
  11. Serve immediately. Transfer the salmon and asparagus to plates. Squeeze fresh lemon over everything if using.

Don’t skip patting the salmon dry—moisture prevents the glaze from sticking. Watch your oven temperature; if it runs hot, check the salmon at the 10-minute mark. Don’t crowd the pan; use two sheet pans if doubling the recipe. Line your pan with parchment paper or foil for easy cleanup. Let the salmon rest for 2 minutes after cooking to allow the glaze to set.
