Easy Sheet-Pan Bratwurst with Apples & Onions

A simple, high-reward weeknight meal featuring pork bratwursts roasted with sweet apples and caramelized onions on a single sheet pan. This low-effort dish delivers bold, savory-sweet flavors with minimal cleanup.

  • 6 to 8 high-quality pork bratwursts
  • 3 large sweet apples (Honeycrisp or Gala), cored and cut into wedges
  • 2 large yellow onions, sliced into half-moons
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon Dijon mustard
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)
  • 1 teaspoon fennel seeds
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt (adjust to taste)
  • Freshly cracked black pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Peel and core apples, cutting them into 1-inch thick wedges. Slice onions into quarter-inch thick half-moons.
  3. Line a large half-sheet pan (18×13 inches) with parchment paper.
  4. Place apple wedges and onion slices in a single layer on the pan. Drizzle with olive oil and sprinkle with fennel seeds, garlic powder, salt, and pepper. Toss to coat evenly.
  5. Arrange bratwursts on top of the vegetable bed, ensuring they are not crowded.
  6. Roast for 20 minutes.
  7. Remove pan from oven. Flip brats using tongs. Brush tops of brats with Dijon mustard. Toss vegetables gently to redistribute.
  8. Return to oven and roast for another 15-20 minutes, or until brats reach an internal temperature of 160°F (71°C) and apples are tender/caramelized.
  9. Remove from oven and let rest for 5 minutes.
  10. Sprinkle with fresh thyme and serve immediately.

Notes

Do not overcrowd the pan to ensure roasting rather than steaming. Use firm apples like Honeycrisp or Gala to prevent them from turning to mush. If using pre-cooked brats, reduce cooking time by 5-10 minutes. For a spicy kick, add sliced jalapeños. For a beer-braised variation, add half a cup of lager or pilsner to the pan before roasting.
