  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, cold and cubed
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lemon juice
  • 1/4 cup brown sugar (light or dark)
  • Optional: 1/2 cup chopped pecans or walnuts

Instructions

  1. Peel and slice peaches, then toss with 1/4 cup granulated sugar, lemon juice, and vanilla extract. Set aside to macerate for 15 minutes.
  2. In a large bowl, combine 1 1/2 cups flour, baking powder, salt, and 1/2 cup granulated sugar. Cut in cold butter until mixture resembles coarse crumbs.
  3. Press about two-thirds of the dough evenly into the bottom of a greased 9×13-inch baking pan. Bake at 350°F for 15 minutes until lightly golden.
  4. In the remaining dough, add 1 cup flour, brown sugar, cinnamon, and optional nuts. Mix well and crumble evenly over the macerated peaches.
  5. Spread the peach mixture evenly over the pre-baked crust, then sprinkle the crumble topping evenly over the peaches, gently pressing it down.
  6. Bake for 35-40 minutes at 350°F until the topping is golden brown and peach filling is bubbling. Cover with foil if topping browns too fast.
  7. Cool completely in the pan on a wire rack for about 1 hour to set the filling.
  8. Cut into 12-16 bars and serve plain or with vanilla ice cream.
