Easy One-Pan Garlic Butter Chicken Thighs Recipe

A quick and easy one-pan dinner featuring crispy-skinned chicken thighs roasted in a rich garlic butter sauce. Perfect for busy weeknights, this dish delivers restaurant-quality flavor with minimal cleanup.

  • 3 to 4 pounds bone-in, skin-on chicken thighs
  • 4 to 6 tablespoons unsalted butter
  • 4 to 5 cloves fresh garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 cup low-sodium chicken broth
  • 1 lemon (juice and zest)
  • Kosher salt and freshly cracked black pepper
  • 1 tablespoon olive oil (for searing)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 400Β°F (200Β°C). Pat chicken thighs completely dry with paper towels and season generously with salt and pepper.
  2. Heat a large, heavy-bottomed skillet or cast-iron pan over medium-high heat. Add olive oil.
  3. Place chicken thighs skin-side down in the pan. Sear without moving for 5-7 minutes until skin is golden brown and crispy.
  4. Flip chicken and sear the other side for 2 minutes. Remove chicken from pan and set aside on a plate.
  5. Reduce heat to medium. Add butter to the same pan. Once melted, add minced garlic and dried herbs. Stir constantly for 1 minute until fragrant, being careful not to burn the garlic.
  6. Pour in chicken broth and lemon juice. Use a wooden spoon to scrape up browned bits from the bottom of the pan.
  7. Return chicken thighs to the pan, skin-side up. Spoon some of the garlic butter sauce over the top of each piece.
  8. Transfer skillet to the preheated oven. Bake for 20-25 minutes, or until internal temperature reaches 165Β°F (74Β°C).
  9. Remove from oven and let chicken rest for 5 minutes before serving. Garnish with fresh parsley and extra lemon juice if desired.

Notes

Patting the chicken dry is crucial for crispy skin. If using boneless thighs, reduce oven time to 15-18 minutes. For a spicy kick, add red pepper flakes. Can be made dairy-free by substituting butter with olive oil. Leftovers store in the fridge for up to 3 days or freeze for up to 3 months.
