Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or nonstick spray. You can also line it with parchment paper for easy removal.
  2. In your large mixing bowl, mash the ripe bananas with a fork until smooth. A few small lumps are fine—they add texture. This should take about 1 minute.
  3. Pour in the slightly cooled melted butter and stir until combined. The mixture should look glossy and smooth.
  4. Add the sugar and stir vigorously for about 30 seconds. Crack in the egg, add the vanilla, and mix until everything is well incorporated. The batter will look slightly thinner now.
  5. Sprinkle the flour, baking soda, salt, and cinnamon (if using) over the wet mixture. Stir gently with your fork or spatula until just combined. Do not overmix—a few streaks of flour are okay.
  6. Pour the batter into the prepared pan. Use your spatula to scrape every last bit from the bowl. Smooth the top gently.
  7. Bake for 55-65 minutes. The bread is done when a toothpick inserted in the center comes out clean or with a few moist crumbs. The top should be golden brown and cracked.
  8. Cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely. This step is crucial—cutting too early will result in a gummy texture.
